Change analytics to a privacy respecting provider

Hi Sami,

I see google analytics was just reactivated. Given that google is absolute garbage when it comes to privacy might an alternative not be a better option?

With Umami actually being free as well!

Obviously no need to implement this tomorow, but just something to consider...

Matomo is now being tested.

(That said the platform seems to be rather buggy and had big installation issues with it...)

- Umami runs over Node.js which is an unnecessary installation to our config.

- Matomo is mostly free but some a bit useful features are extra cost.

- Possibly also Open Web Analytics, but that seems a bit .. outdated.
